MORI offers an ultra-intimate dining experience for up to twelve guests. The space — an eclectic blend of elegant classism and hedonistic funk — is anchored by a U-shaped counter featuring hand-carved wood panelling. Overhead, a spinning disco ball hints of the volley of surprises that lie in store for diners. This sets the perfect stage for the original and unexpected Hokkaido-inspired cuisine.
The dynamic team is led by Chef Chun, who specialises in both traditional and modern interpretations of Japanese cuisine. He began his career under the tutelage of chefs renown in the craft, including Chef Hideaki Nakajima and numerous head chefs hailing from Nobu. Over the last two decades, Chun has also held the position of Lead Chef at Ce La Vi, Kudeta and Rakuichi – Dempsey Hill.
Completing the gourmet experience at MORI is an exciting beverage programme spearheaded by Elliot Faber — Certified Sommelier, Advanced Sake Professional, and the founding Beverage Director for Michelin-starred Yardbird Hong Kong and RŌNIN.
